Grilled halloumi burger with asparagus and cherry tomatoes

A slice of halloumi actaully takes quite a long time to get crispy on the grill, about 8minutes on one side and 6minutes on the other. But whilst it’s cooking you can toast the bun, grill the aspargus and slice the tomatoes. This would be INCREDIBLE with a fresh minty lemon sauce… but as usual I had no mint! I put it in my mojitos and forget about important things like halloumi burgers, whoops.

I cook crazy things on the grill like risotto, curry and stew and then… I cook really, really obvious things on the grill like this lemon-ginger-garlic-chilli (everything delicious) beef with red peppers. Took 10minutes from hunger to plate. Success!

In a few days time, I’ll be moving out of my uni accomodation and back to a real house with a real kitchen but until then I am using up all the little bits hanging about in my fridge and cupboard… 

Puy lentil salad

1 can of puy lentils, some finely chopped cherry tomatoes, celery, red onion and garlic all dressed in lemon juice and balsamic vinegar with some sliced avocado and black pepper on top.

Grilled aubergine with spicy kidney beans

Slice up as much aubergine as you want to eat (haha!) and then arrange the slices on a hot grill, turning them once after 8minutes and letting them cook for another 8minutes. Season with salt and pepper. Whilst those are cooking, rinse a can of kidney beans in hot water to warm the beans up a bit then dress with some great spices: paprika, cumin, tabasco…

Season with salt and pepper. Whilst those are cooking, rinse a can of kidney beans in hot water to warm the beans up a bit then dress with some great spices: paprika, cumin, tabasco…

Aubergine and cherry tomato pitta pizza

Start off by grilling some discs of aubergine for about 4minutes on each side, then arrange them on top of a nice wholemeal pitta bread followed by a layer of sliced cherry tomatoes and finally some cheese. Then wedge the lid of the grill open with a small bottle or something so it lingers above the cheese enough to melt it but not touching or it will get messy. 

This would be also great with some dried oregano or any fresh green herb… alas I did not have any!

Tomorrow I am starting my university exams… SCARY. But for now, there’s good food (and it’s leftovers for lunch tomorrow) to cheer me up

Jerk turkey - marinated in your favourite jerk seasoning, some extra hot sauce, lemon juice, black pepper and salt for as long as you can bear and then grilled for 5minutes.

Charred red peppers, wholemeal pitta bread, smashed avocado.

My biggest downfall during revision is being at the library and getting HUNGRY… I am then forced to go on a food mission. So to encourage better productivity this afternoon, I am taking some yoghurt + apricot vanilla compote with me in a jar so that at 5pm, I’ll have no excuse to leave…

Oh and I made the apricot vanilla compote on the grill last night but I’ll post the recipe later!

I am so excited about having made this that writing a comprehensible post may be a challenge. I have tried A LOT to cook eggs on the George but each time I am foxed by watery whites which spread too fast across and then cook far too quickly. This post is an announcement of the end of bad eggs.

I give you: A wholemeal pitta bread grilled with a cracked egg inside (for about 9minutes, or until the white is firm) and served with tomato, avocado, red onion salsa.

The chickpea stew is a fun thing to be able to cook on the George! You start off by grilling a red onion, a few cloves of garlic, some chilli, 5 cherry tomatoes and a bit of vegetable oil for 10minutes. Then add a can of chickpeas and half a glass of rosé wine and cook for another 10minutes. It’s best left for a while, resting on the turned-off grill and reheated 30minutes or so after, but you can eat it straight-away! Then add some spring onion at the end. 

The courgette ribbons are done by using a vegetable peeler along the length of the courgette and then just dress with some fresh  lemon juice.

I felt like I was on holiday this morning as I cycled back from the market with a loaf of lovely bread and an assortment of fruit and veg in my wicker backet. 

Light rye bread, lollo rosso lettuce, endives, garlic, spring onions, asparagus (yaaay!), beansprouts, red peppers, cherry tomatoes, bananas, lemons and apricots. 

I like the summer.
