&lt;p&gt;A slice of halloumi actaully takes quite a long time to get crispy on the grill, about 8minutes on one side and 6minutes on the other. But whilst it’s cooking you can toast the bun, grill the aspargus and slice the tomatoes. This would be INCREDIBLE with a fresh minty lemon sauce… but as usual I had no mint! I put it in my mojitos and forget about important things like halloumi burgers, whoops. &lt;/p&gt;

&lt;p&gt;Slice up as much aubergine as you want to eat (haha!) and then arrange the slices on a hot grill, turning them once after 8minutes and letting them cook for another 8minutes. Season with salt and pepper. Whilst those are cooking, rinse a can of kidney beans in hot water to warm the beans up a bit then dress with some great spices: paprika, cumin, tabasco…&lt;/p&gt;

&lt;p&gt;Start off by grilling some discs of aubergine for about 4minutes on each side, then arrange them on top of a nice wholemeal pitta bread followed by a layer of sliced cherry tomatoes and finally some cheese. Then wedge the lid of the grill open with a small bottle or something so it lingers above the cheese enough to melt it but not touching or it will get messy. &lt;/p&gt;

&lt;p&gt;This would be also great with some dried oregano or any fresh green herb… alas I did not have any!&lt;/p&gt;

So to encourage better productivity this afternoon, I am taking some &lt;b&gt;yoghurt + apricot vanilla compote&lt;/b&gt; with me in a jar so that at 5pm, I’ll have no excuse to leave…&lt;/p&gt;

&lt;p&gt;Oh and I made the apricot vanilla compote on the grill last night but I’ll post the recipe later!&lt;/p&gt;

&lt;p&gt;The chickpea stew is a fun thing to be able to cook on the George! You start off by grilling a red onion, a few cloves of garlic, some chilli, 5 cherry tomatoes and a bit of vegetable oil for 10minutes. Then add a can of chickpeas and half a glass of rosé wine and cook for another 10minutes. It’s best left for a while, resting on the turned-off grill and reheated 30minutes or so after, but you can eat it straight-away! Then add some spring onion at the end. &lt;/p&gt;

&lt;p&gt;The courgette ribbons are done by using a vegetable peeler along the length of the courgette and then just dress with some fresh  lemon juice. &lt;/p&gt;

&lt;p&gt;Grill the aspargus for 2 or 3minutes so that the little spears are partially cooked before adding them to the sandwich, this is to make sure that they’ll be nice and tender. Then grill the whole package (not forgetting black pepper and a little squeeze of lemon juice) for about 6minutes…&lt;/p&gt;

I had never tried it before and perhaps I’d reduce the vinegar next time as it was a tad too tangy - lovely flavour though. The rest of the salad is made up of romaine lettuce, grilled orange peppers, a few purple olives and some homemade basil dressing.&lt;/p&gt;

&lt;p&gt;Yesterday I bought some reduced beef medallions and because they can be quite a tough cut of meat, I thought I would experiment with some acidic marinades to break down the toughness. &lt;/p&gt;

&lt;p&gt;This piece had been marinating in about 2tbsp lime juice, some pureed ginger and a tbsp of soy sauce for 24hrs. It was DELIGHTFUL. Grill it first for about 5minutes and then you can let it rest whilst the vegetables are cooking. When I’m doing vegetables, I always splash some water onto the hot grill to create steam. With these beauties, I also chopped up a red chilli, some more ginger and a garlic clove to mix with the water and so flavour the veg which took about 5minutes. Then you can drizzle some soy sauce on it all at the end! &lt;/p&gt;
